Sun Mushroom

Agaricus blazei

Agaricus blazei was first noticed growing wild in the pastures around Piedade, a small mountain town in Brazil, where local farming families gathered it for its sweet, almond-scented flesh and its reputation for keeping people hearty through hard seasons. In the 1960s the mushroom made its way to Japan, where it became known as Himematsutake and was quickly folded into folk wellness traditions as a tonic for the body's own defenses. Long before scientists took an interest in its beta-glucan content, rural cooks were simply drying the caps and simmering them into a broth meant to fortify the whole household. Today it is cultivated and dried around the world, but it still carries that old reputation as a strengthening, everyday mushroom rather than an exotic cure.

Sun Mushroom Broth

A simple, traditional way to enjoy the mushroom's savory, faintly almond-like character, taken as a warming daily tonic.

Simmer 3 to 5 grams of dried sliced mushroom in 2 cups of water for 15 to 20 minutes, then strain and drink warm.

Everyday Mushroom Soup Addition

Home cooks in Brazil traditionally added the dried mushroom straight into soups and stews rather than preparing it separately.

Add a small handful (about 2 to 3 grams) of dried sliced mushroom to a simmering pot of soup during the last 20 minutes of cooking.

Safety.

Agaricus blazei is a safe culinary and folk-medicinal mushroom when properly cultivated and cooked, but it should never be foraged casually, since it closely resembles other Agaricus species. It may also interact with immune-modulating drugs, chemotherapy, or blood thinners.
